Vegetable and Wheat Salad


Vegetable and Wheat Salad

1 cup bulgur
3 cups chopped parsley
1/4 cup chopped mint
1/2 cup chopped green onions
1 cup chopped tomatoes
1 teaspoon salt
1/4 teaspoon white pepper
1/2 cup olive oil
1/4 cup lemon juice


Soak the bulgur in water for about 10 minutes. Mix all other ingredients together except for olive oil and lemon juice. Add the bulgur, after squeezing out all the water. About fifteen minutes before serving, add lemon juice and olive oil and mix well. Serve on a bed of lettuce leaves.
