Gluten Free Vanilla Cupcakes with Butter cream Icing
Butter cream frosting has to be in my opinion the best frosting for a lot of cupcakes.  That is why for my vanilla cupcakes I made a vanilla butter cream frosting that was so delicious I can eat the whole bowl of frosting.  In fact, next time I make these I think I am just gonna make the frosting and eat it alone.

What You Need
2 sticks of softened unsalted butter
3 cups of sifted powdered sugar
1 tbsp of vanilla extract
4 tbsp of heavy cream
1/4 tsp of salt

What You Need To Do
In a large bowl beat with an electric hand mixer the butter then slowly add in the 3 cups of powdered sugar.  Make sure the powdered sugar and butter and blended well together.  Then add the rest of the ingredients and beat until the frosting is at the perfect consistency.  If it is too thick add some more cream.

Double Stuffed Oreo Cake Pops
I made these for my boyfriend for Valentine's Day and he absolutely loved them.  He said they are like Oreo cookies on steroids.  That comment made me laugh and I was so happy he enjoyed them as well.

What You Need
1 (15.35oz) bag of Double Stuffed Oreos
1 (8oz) package of cream cheese (softened)
White Chocolate Bark for melting
Cake pop sticks
Parchment paper

What You Need To Do
In a blender or food processor put all of the Oreos from the bag and chop until the cookies turn into crumbs.  Once that is done pour it into a bowl and save about 1/3 cup of Oreo crumbs for later.  Then add the cream cheese into the bowl of crumbs and with a spoon blend all of the crumbs and cheese together.  Place a sheet of parchment paper on a flat pan.  Begin to form 1 inch round balls with the Oreo batter and place them on top of the parchment paper.  Then stick one pop stick in each ball.  Once you are done place them in the freezer for 15 minutes.  In the meantime melt your white chocolate bark in the microwave or over the stove.  Just follow the directions on the chocolate box for the best way to melt the chocolate.  After the 15 minutes have passed take the balls out of the freezer and begin to dip each one in the melted chocolate then sprinkle some Oreo crumbs on top.  Place it back on the parchment paper and then place the balls back into freezer for another 10 minutes.  Then pop them out of the freezer and indulge!
